My family!

Yesterday my mom took the most amazing maternity photos of my little family to be! I knew she would give us great photos but she really did exceed even what I had in visioned!
I'm so happy with the honesty of them, just Kenny and myself being us.. Loving and lounging! Thank you so much mom for capturing something so special for us!

Chicken Enchilada's... BUENO!

So just so you know my palette, I am a lover of extremely flavorful and somewhat spicy Mexican food! That being said there are a lot of alternatives to this recipe to help tone down the extra flavor or extra pop of spice if its not really your cup of tea! I'll include those quick options in the recipe! Also, I'm a definite "pinch of this" "dab of that" type of cook so I really suggest going with your instinct when it comes to cooking, trust me, it doesnt have to be stressful, have fun with recipes, make them your own!

Ingredients
Salt
Pepper
2 Quarts Water
2 Chicken Breasts
1/2 Red Onion (Rough chopped)
Handful Cilantro
Dash of chile powder
1 large can Jalapenos (for less spice, use just 3 fresh jalapenos and de-seed them)
Chicken bullion (adds extra flavor, if you dont need the extra saltiness just use water without adding the bullion)
1 Carrot stick
1 celery stick
Decent amount of cheese (I use cheddar jack) 
1 can Olives
about 15-16 White corn tortillas 

(Another way to cut some of the spice of the jalapenos is to buy a small can of enchilada sauce and add it in with your own homemade sauce, but I wouldnt cut out your own sauce altogether, you'd be missing out on amazing flavors!)


In a large pot, bring all these ingredients (minus the cheese, tortillas and olives) to a boil! Once water is boiling, add your chicken breasts and continue to boil for about 45 minutes or until your chicken is cooked! To be sure your chicken is cooked use a thermometer and make sure the internal temperature (measured at thickest part of the breast) is at 165 degrees F

Once Chicken is cooked set aside in a bowl and allow to cool.. 

Now pull out your food processor or blender... From the pot you just cooked your chicken in, you will have an amazing flavor filled broth! 

First, scoop all the veggies into your processor with a slotted spoon.. Then add just enough of the liquid to just cover all the veggies! Then BLEND! You may have to do this in two batches if you have a small processor! Also add more water if your sauce is too thick and blend until you have your desired consistency

No you can begin to pull apart your chicken (i just use two forks and shred away) 

I like to put my tortillas in the microwave folded in a paper towel for about a minute so they are softer and easier to work with

In my large baking dish I put a little bit of the sauce on the bottom to cover, then I begin my assembly!



I usually assemble by adding some chicken and cheese to the tortilla, rolling and then placing in the pan!

This recipe made about 15-16 enchiladas all packed in! Depending on the size of your dish you might make more or less (obviously lol)

Once I have all my enchiladas all snug in the dish I cover with the rest of my homemade green sauce... Add the rest of my cheese on top of that (I try not to put TOO much cheese because as it melts it becomes so stringy and can be difficult to eat! Just add your olives on top of that! Then cover with tin foil and pop into a 450 degree oven! (The reason we cover with foil is so that your enchiladas dont immediately burn, it creates a bit of a steam zone for even cooking)

Let cook with foil on for about 10 minutes, then remove foil and let go for an additional 5 minutes!

I like to top mine off with some fresh cilantro before serving and I also like to serve with sour cream and lime wedges!

Hummingbirds and Baby Kicks... such is life

I can't believe that in just 15 weeks I will be a mommy... A full blown diaper changing, breast feeding, stressed out MOMMY! 

The tummy is definitely obvious these days! People are no longer afraid to ask "When are you due?" or to even start rubbing my tummy for that matter... (Which I must say is terribly unusual, but as long as it doesn't become awkwardly long I usually just go with it)... 







 

The reality of mommy-hood is setting in slowly.. With the baby shower coming in just a couple weeks along with our last ultrasound that same day I feel things slowly coming together... Jackson's room is being painted.. Plans are being made, he's kicking like crazy.. Oh its just such a crazy game of hurry up and wait!

I've tried to keep myself busy with my business and with chores around the house (aka cleaning up after the oldest child Kenny).. But as hard as I try to keep myself distracted I always find myself stopping throughout the day and picturing what it will be like holding onto my darling son as I watch my favorite shows.. what he will smell like... what he will look like... will he look at me and recognize my voice when I tell him I love him? These moments just can't come soon enough...

I was able to spend some time with my mom this weekend in Fresno, I'm oh so grateful to be able to go to Fresno and see her as often as I have these past few weeks.. It was so much fun going to my 10 year high school reunion as well.. It was really nice seeing so many old friends! 







But I think my highlight was sitting outside with my mom on Saturday watching all the hummingbirds bickering over my moms hummingbird feeder! It was terribly adorable and I captured some really amazing shots of them all fluttering around the back yard.. I thought I would share them with you!
